Sunday Crepes

Another Sunday brunch with my love. We love lounging and brunching on our Sunday because it’s the one day we make sure we spend together before the busy week starts. Cooking is something we love doing together because we can be creative and be in company with each other. I suggest cooking with your loved one to every couple, it is really important to do things together and make time for each other! Today our brunch was one of my favorites, crepes! This recipe was created by Felipe and is completely gluten free (of course). Underneath is also my smoothie recipe that I make all the time and is perfect with brunch.



1 Ovo

1/2 ou 1 colher de chá de goma de xantana (normalmente encontrada em lojas de especiarias ou produtos naturais)

1 1/2 xícara de farinha de arroz

4 Colheres de sopa de óleo

1/2 colher de chá de sal

Entre 1 1/2 e 2 xícaras de leite (depende da consistência que estiver sua massa depois de adicionada a goma de xantana)

Modo de Preparo:

Bata o ovo, leite, óleo e farinha de arroz no liquidificador. Quando está bem misturado adicione o sal e a coma de xantana. Você vai perceber que a consistência da mistura vai mudar e ficar mais densa e grossa. Se você acha que está muito grossa, adicione o leite lentamente até encontrar uma textura parecida com um creme. Tenha cuidado, se estiver muito líquido a massa irá se quebrar fácil, e se estiver muito grossa, vai ser difícil de dar a forma e espalhar a massa na frigideira. O segredo é balancear estas duas coisas.


1 Egg

1/2 or 1 teaspoon of xanthan gum

1 1/2 cup of rice flour

4 table spoons of oil

1/2 teaspoon of salt

Between 1 1/2 and 2 cups of milk (depends on the consistency after the xanthan gum)


Beat the egg, milk, oil and rice flour in the blender. When it’s smooth add the salt and the xanthan gum. You will notice the consistency of the mixture will change and get more thick. If it feels to thick  keep adding milk until you find the texture similar to custard. Be careful because if it is to liquid, the crepes might break easily, and if is to thick it will be hard to shape and spread in the pan. The secret is to balance.


Now that you have the crepes done, you can fill with whatever fruit you like. We filled with strawberries and plums. You can also fill with some whipped cream, which we normally do but didn’t have in the house today. Roll your crepe and sprinkle with some ice sugar and maple syrup and enjoy!


Sunday Smoothie (2 servings):

1 cup of strawberries

1 cup of papaya

2 bananas

1 cup of milk (or you can do yogurt, I use whatever we have in the house)

1 tsp of cinnamon (optional)

Blend together, and enjoy.
